Honey Roasted Beets and Carrots

This recipe combines nutrient-rich carrots and beets, which are high in fiber, vitamins, and antioxidants, with heart-healthy olive oil and honey for natural sweetness. This dish not only tastes delicious but also supports overall health.

Honey Roasted Beets & Carrots 

Yield 

4 servings 

Ingredients 

  • 4 large carrots, peeled and cut into 1-inch pieces 

  • 3 beets (red or golden), trimmed, peeled, and cut into wedges (May also use 2 (15 ounce) cans of beets, drained and rinsed) 

  • 3 tablespoons olive oil 

  • 2 tablespoons honey 

  • 1 tablespoon balsamic vinegar 

  • ¼ teaspoon dried thyme 

  • ¼ teaspoon dried oregano 

  • ½ teaspoon each salt and pepper 

Instructions 

  1. Preheat oven to 450 degrees Fahrenheit. 

  1. Whisk together olive oil, honey, balsamic vinegar, thyme, salt, and pepper. 

  1. Add vegetables and mix well to coat. 

  1. Spread evenly across a sheet pan and roast for 25-30 minutes, stirring halfway (Consider lining pan with foil for easy cleanup).
