Recipe: Honey Sesame Chicken

Honey Sesame Chicken

Yields: Four servings

INGREDIENTS

  • 1 cup quick cooking brown rice  
  • ½ cup low sodium chicken stock  
  • 1 tablespoon sesame oil  
  • 1 tablespoon low sodium soy sauce  
  • 1 tablespoon honey  
  • ½ teaspoon garlic powder  
  • 1 tablespoon rice vinegar 
  • 1 tablespoon olive oil  
  • 1.5 pounds boneless skinless chicken breast, cut into bite sized pieces  
  • 1.5 cups frozen broccoli florets  
  • 1 tablespoon corn starch
  • ¼ cup cold water
  • Sesame seeds and green onion for garnish (optional)  

INSTRUCTIONS

1. Prepare rice according to package instructions. 

2. In a large bowl, whisk together the chicken stock, sesame oil, soy sauce, honey, garlic powder, and vinegar then set aside.  

3. In a large skillet, preheat olive oil over medium heat. 

4. Begin to brown chicken for 3-4 minutes.  

5. Add the broccoli to the pan and continue cooking 5-7 minutes or until chicken is cooked through to 165 degrees F.  

6. Add the sauce to the pan and bring to a simmer.  

7. In a small bowl, whisk together the corn starch and water to make a slurry then add to the pan.

8. Simmer for 2-3 minutes or until sauce has thickened.  

9. Top with sesame seeds and serve over brown rice.
